I made these for dinner last night, and went to link up the recipe on my blog to an Instagram story and realized I've never posted it on here! Whaaaaaat. This meal has been a staple of years, and I make it ALL.THE.TIME. It never gets old, and it's so easy!
**Tailor the quantities to however many people you're serving. I use about 1/2 - 1 sweet potatoes per person.
Slice the sweet potatoes, lay on a greased baking sheet, drizzle with avocado oil, and sprinkle with salt, pepper, and garlic. Bake at 400 for about 40-45 minutes (flipping half way). I like to broil them for the last couple of minutes to make them crispier. Top with whatever you want! My go-to's are chicken, black beans, corn, avocado, green onion, tomatoes, cilantro, and salsa. I'm dairy free right now because of breastfeeding, but I'd normally add a little cheese and plain greek yogurt on top too!
