This is my favourite meatball recipe, but I'd toooootally forgotten about it until this week! I made it last night for dinner and it was just as good as I remembered! It's also super easy, and I usually have the ingredients on hand anyway!
I like heating up marinara sauce and serving the meatballs with the sauce over spaghetti squash or Banza pasta. I like having something on the side too, like roasted vegetables or a salad, to get in more nutrients! **DON'T FORGET TO TOP IT WITH PARMESAN. Yummm!
- 1lb ground turkey
- 3 cloves garlic, minced
- 1/3 cup dried parsley (I used fresh parsley last night instead, and it worked great!)
- 1 tbsp dried basil
- 1 egg
- 1/4 cup breadcrumbs (I use Sprouts whole wheat crumbs, or blended oats)
- 1 tsp pink salt
- 1 tsp pepper
- 3 tbsp marinara sauce
Preheat the oven to 400. Combine all of the ingredients into a bowl and mix well. Roll mixture into small balls and place on a greased cookie sheet. Bake for 15-20 minutes.
