I made this meal last week and I loved how fresh tasting and easy it was to put together. Piper gets the fussiest in the evening, right when I'm trying to make dinner, so meals that don't require a ton of prep work are life savers!
I wanted to share the love and put it on here (along with my other favourite recipes HERE) because I feel like most mums appreciate quick, healthy, and tasty dinners. Am I right or am I right?
PESTO ZUCCHINI NOODLE PASTA
- 3 cups fresh basil (make sure it's fresh)
- 1/3 cup raw pine nuts
- 1 fresh lemon, juiced
- 2 cloves of garlic
- 3/4 tsp pink salt
- 1/4 cup olive oil
- 3 zucchinis
- Grilled chicken
Pulse basil, pine nuts, lemon, garlic, and salt in a blender until evenly chopped. Slowly pour in olive oil. Pulse again until evenly combined, but not smooth. Spiralize zucchini and mix with pesto sauce. Top with chicken and sprinkle more pine nuts on top.
