This meal has become a new staple in our humble abode! My mum made it a couple of weeks ago for family dinner and Jordan seriously brought it up 5x on our drive back home ha. It really is that good though, and it's so perfect for summaaa!
2-3 Tbsp rice vinegar
1 tsp olive oil
1/2 cup mixed fresh herbs (oregano, parsley, thyme)
1 tsp chopped garlic
salt and pepper, to taste
Mix marinade ingredients together and combine with chicken breast. Cover and let sit in refrigerator for at least 4 hours (the longer the better). Broil the chicken, flip breasts over and top with a slice of pineapple and a slice of cheese. Broil again until meat is cooked through. I served the meat with a kale salad and extra chopped pineapple! Oh yeeeeer!
