One of the hardest things about having a new little baby is finding the time to feed myself. I couldn't fathom this concept before I had a baby because my life revolved around food haha. But when a newborn is thrown into the mix, it's super hard to make meals for myself because my schedule is Piper's schedule. I can't necessarily stop what I'm doing with her and make myself a meal whenever I feel hungry. I'm starving seriously all the time thanks to nursing and now working out (ah), and it's really important to eat enough to keep a good milk supply, so I'm all about quick, and easy meals I can grab or throw together to keep myself fueled well!
This overnight pancake breakfast is quickly becoming another favourite! It's so convenient to have it already made so I can just pull it out of the fridge and eat it while I nurse Piper first thing!
What you'll need:
Protein pancakes (I used Kodiak's protein powder to make mine because I didn't have time to make a batch from scratch)
unsweetened almond milk
coconut flakes (I used bare snacks coconut)
maple syrup, or raw honey
berries of choice
Place pancakes on the bottom of tupperware and top with whatever toppings you like! Above are the ones that I used but you can mix it up! Pour 1/3 cup almond milk over pancakes, cover, and refrigerate overnight! Adding the milk on top makes it super doughy and delicious!! Yaaaaam!
