Baby prep is at an all-time HIGH at our house right now. I'm busy cleaning/organizing every nook and cranny, washing all of the baby clothes and blankets, figuring out what last minute items we still need, and starting to get some freezer meals ready!
I plan on doing a post with a bunch of good meals/foods to have ready for after the baby comes, and this is one of them! I made a lot of crockpot recipes before Piper came, or just doubled the recipes of regular dishes, and popped half of it in the freezer for later. It was LIFESAVING for those first few weeks of being SO tired, recovering, and just all-around overwhelmed.
This recipe is packed with vegetables, super easy to put together, and so tasty! It's also pretty versatile, and you can add in/sub whatever veggies you want! I made it for dinner on Monday, and the leftovers are ready to go in the freezer for after baby boy comes!

- 1lb ground turkey (or grass-fed beef)
- 1 large onion, diced
- 1 of each: red pepper, yellow pepper, orange pepper, chopped
- 1 zucchini, chopped
- 2 cloves garlic, minced
- 3 celery stalks, chopped
- 1 jalapeno pepper, diced
- 1 can chopped tomatoes (14.5 oz)
- 1 can red kidney beans (15 oz)
- 2 cans free-range chicken broth (14.5 oz)
- 1 1/2 teaspoon salt
- 1 1/2 teaspoon pepper
- 1 tablespoon cumin
- 2 teaspoons oregano
- 1 teaspoon chili powder
- Toppings: plain greek yogurt, cheese, cilantro, green onion
Put everything into a crockpot and cook on low for 5-6 hours, or high for 3-4 hours. **Check out the original recipe HERE if you want to cook it on the stove.
